Mmmm, fresh strawberries; strawberry slices in my oatmeal, on my French toast, on top my ice cream, and in my spinach salads. I love fresh strawberries, just not when they are out of season. Out of season strawberries are the worst, because even when they look bright red they are just so bland and tasteless. My best solution was to make a strawberry sauce out of frozen strawberries for when they are out of season. This sauce is very very simple, and while they are not the same as in season fresh strawberries, this strawberry sauce is delicious in its own right.
One great thing about this sauce is you can store it different ways depending on when you would like to have it. If you want it right away you just keep it in the saucepot on warm and you can spoon it out over your delicious desserts. It keeps well in the refrigerator so you can keep some for the week. Or you can do what I did this most recent time and fill your ice tray with strawberry sauce and freeze it. Then when I make my oatmeal in the morning I take one strawberry cube and put on top of my oatmeal, it melts from the heat and makes a delicious strawberry oatmeal.
2 Cups frozen strawberries (or mixed berries)
2 Tbsp. honey
2 Tbsp. balsamic vinegar
Steps to cook this strawberry sauce
Step One: Add all ingredients to a medium sauce pan and set over a low to medium heat
Step Two: Let the strawberry mixture cook for about 10 minutes, stirring occasionally
Step Three: Transfer the strawberry mixture into a blender and blend until fairly smooth
Step Four: Transfer the liquid back into the saucepan and either set it on warm until needed or transfer into an ice cube tray for convenient frozen servings
How to make this A Well Balanced Plate
I like to pair this strawberry sauce with fresh oatmeal. Cook your oats your favorite way, I cook a mix of steal cut and rolled oats in milk, then top them with this strawberry sauce either fresh or frozen. You could also mix this into some plain yogurt for a healthy anytime snack. This sauce would also be great over some vanilla ice cream or on a simple butter cookie if you want to add a bit of strawberry into your dessert.
