- To peel the tomatoes, spot them in boiling water for one minute and then right away transfer to cold water. Peel and quarter tomatoes, and spot in a big saucepan with the salt. Gradually simmer above reduced heat for twenty to thirty minutes, stirring occasionally to avert burning.
